Se pueden pagar más de 2.500 euros en metálico (la normativa de los 1.000 euros aún no está vigente) siempre que sea una transacción entre particulares (es decir, no hay limite). Y si que hay límite si uno de los dos (vendedor o comprador) son profesionales/empresa, entonces tiene que pasar por la transferencia bancaria.

En cuanto a como justificar si luego se ingresa el cobro en metálico... es fácil. Basta con enseñar el contrato de compra-venta del vehículo y ya está justificado el ingreso de ese dinero en efectivo.
